Parmigiana & Prosciutto Crostini


1 loaf of artisan French bread

2 tablespoons olive oil

1 cup light mayonnaise

6 ounces finely shredded parmigiana cheese

1⁄4 lb finely cubed prosciutto


Combine mayonnaise, shredded parmigiana cheese, and cubed prosciutto. Set spread aside.

Cut bread into ½ in thick slices. Lightly drizzle with olive oil and place on a cookie sheet in a 375° direct heat oven. When crostini begin to brown, remove from heat.

When safe to handle, evenly top each with the cheese and prosciutto spread. Return to oven and remove when cheese spread melts and toasts. Serve hot.
